About Us

Disco Kitchen was created in Portland, Oregon by Liberty Dilger. She fell in love with the art of food from her strong Italian roots. Her grandmama & mother taught her how to cook from a very young age. Always knowing she wanted to be an entrepreneur , Liberty rebuilt an old school hot dog cart & began seeing the happiness flow through others with her love of satiating hungry souls. She started taking it to Festivals throughout the West Coast feeding Italian street food. She fell in love with making exotic sauces & blending in nutrition wherever possible from local farmers. More currently she caters events big & small around the PNW.  Liberty's influence in cooking is with fresh, high-quality ingredients cooking with the heart with the flavors & spices from Mesoamerica, Italy & Thailand.
